Loaded Olive Oil Bread Dip

    A shareable olive oil bread dip layered with hummus, olives, parmesan and Honest Toil extra virgin olive oil. Perfect for summer hosting.

This recipe is from our At Home With series featuring creative strategist and fashion designer Nicole Brixi. 

Part dip, part centrepiece, this is the sort of recipe that was made for summer hosting. Layered with creamy hummus, roasted garlic, parmesan, herbs and a generous pour of Honest Toil, it's designed for tearing into with warm bread and sharing around the table.

As Nicole puts it, it's "the dip to end all dips" – simple to assemble, endlessly adaptable and guaranteed to disappear quickly.

Ingredients

  • Hummus
  • 100g Parmesan, finely grated
  • 2 roasted garlic cloves, mashed
  • Sundried tomatoes, roughly chopped
  • Kalamata olives
  • Pomegranate seeds
  • Fresh basil leaves
  • Crispy cavolo nero
  • Chilli flakes
  • Honest Toil Olive Oil
  • Warm focaccia or crusty bread, to serve
Method

1st Bowl:
Pour a generous amount of Honest Toil Olive Oil into the base of a shallow bowl. Finely chop the Kalamata olives and scatter them over the oil, before adding a generous spoonful of hummus on top.

2nd Bowl: 
Pour a generous amount of olive oil into a second shallow bowl and drizzle over a little balsamic vinegar.
Scatter over the mashed roasted garlic, followed by the grated Parmesan, sundried tomatoes, Kalamata olives, pomegranate seeds and plenty of freshly torn basil.
Finish with the crispy cavolo nero, some chilli flakes and an extra drizzle of Honest Toil.

Serve immediately with warm focaccia or fresh bread for dipping and encourage everyone to dig in.

Serving notes: This is the kind of dish that belongs in the middle of the table. Perfect for summer lunches, picnics, aperitivo hour or hosting friends, it's less about following a strict recipe and more about layering great ingredients together and letting everyone help themselves.
