Bibi’s Raw Celeriac & Green Apple Salad with Yoghurt
This salad is our latest collab with Bibi's London. Bibi, the founder, created this special dish inspired by Aegean flavours and her family recipes, crafted especially for Honest Toil.

A refreshing and crunchy salad made with raw celeriac and green apple, bound together with a creamy, garlicky yoghurt dressing.

Ingredients
For the mix:
• 500 g celeriac, peeled and shredded
• 1 green apple, shredded
• 150 g thick natural yoghurt
• 40 g quality mayonnaise
• 1 small clove of garlic, finely grated or crushed
• 2.5 ml sea salt
• 50 ml Honest Toil Extra Virgin Olive Oil
To garnish:
• Chopped pistachios (or walnuts, if preferred)
• 60 g fresh dill, finely chopped
• Thin slices of green apple
• More Honest Toil, for drizzling

Method
1. In a large bowl, combine the shredded celeriac and green apple.
2. In a separate bowl, whisk together the yoghurt, mayonnaise, garlic, salt, and olive oil to create a smooth dressing.
3. Pour the dressing over the shredded celeriac and apple. Mix thoroughly to coat all the ingredients.
4. Taste and adjust the seasoning if needed.
5. Transfer to a serving dish and top with chopped dill, pistachios (or walnuts), thin apple slices, and a final drizzle of olive oil.

Serve chilled for the best flavour and texture. Ideal as a light starter or a vibrant side dish.
