Dark Chocolate Tofu Mousse with Olive Oil

A truly indulgent, mood-boosting dessert that also feeds the good bacteria in your gut. This silky chocolate mousse is rich, simple to make, and quietly nourishing, proof that comforting food can still be deeply supportive for the body.
Why this works
Emotional resilience begins with a diverse gut microbiome. In this recipe, silken tofu provides plant proteins that support nerve function while also contributing to gut health. Dark chocolate (especially high-cacao varieties) contains compounds that can stimulate endorphin release and support mood. Ingredients

100g dark chocolate (80% cacao or higher)

400g silken tofu

A pinch of cardamom or crushed juniper

Sea salt flakes

Honest Toil extra virgin olive oil

Method

Melt the dark chocolate gently over a bain-marie (water bath) until smooth.

Once melted, combine the chocolate with the silken tofu in a blender or bowl and mix until completely smooth and silky.

Add a pinch of cardamom or juniper and blend again briefly.

Transfer the mixture to an airtight container or small serving bowls.

Chill in the fridge for at least 2 hours until set.

Serve cool with a pinch of sea salt flakes and a generous drizzle of Honest Toil extra virgin olive oil.
